Violent Violet Veggies

As much as artificial food colouring is harmful, the natural colours of vegetables are beneficial. It is said that the darker and brighter the colour of a fruit or vegetable, the more beneficial it is. But what happens when these bright and dark colours are enhanced artificially? A resident noticed the artificial red colour coming off the vegetable while she was cooking it. How difficult it is to see the difference and choose veggies which have the colour which nature gave them, not man!
