Home Chefs – Part 4 –Kanupriya Khanna

“Baking may be regarded as a science, but it’s the chemistry between the ingredients and the cook that gives desserts life” – it is this chemistry that defines Kanupriya whom I would like to introduce as a baker with a difference.

She sold her first cake in November 2016, knowing little she was embarking on a journey that would bring her unprecedented success and joy. Baking cakes at home had started as a necessity when Kanupriya learned that her children were allergic to eggs and a few other foods. This soon became the ideal gift for friends and family too – which led to her first order from a dear friend who refused to accept it as a “free gift”.

After more than 18 months of baking and selling, she decided to register her company in July 2018. The same year she took the FSSAI license. The urge to introduce health as a major ingredient in her bakes became her driving force. She started experimenting with alternatives to regular white flour and the result was her first quinoa flour cake 8 months later.

Soon she decided to foray into gluten-free bread. It needs an exceptional amount of determination and inspiration to succeed in uncharted territory. At one point she was so disheartened that she decided to give up. The inspiration came from her parents who have been intolerant to dairy and gluten for over 2 decades.

The greatest high has been when the gluten & dairy free bread she baked after 10 months of trial and error – came out perfect in every way with just the right density and taste. This was during the covid period of August 2020.

One thing led to another – after bread came sourdough, burger buns, pizza bases, and ready to eat snacks. Her journey has been nothing less than a roller coaster ride full of fun and adventure. She takes pride in the fact that all her products are extremely clean in terms of ingredients and nutrition and do not use any starches, gums, or rice flour as enhancers or additives.

The support from her family has been tremendous – not just her husband and teenage kids but her parents and sisters, whom she calls soulmates. Her husband handles the business aspect including accounts, marketing, and packaging which gives her time to focus on R&D and production as also her consultation practice as a nutritionist and Dietician.

Born in Mumbai, and having stayed in Singapore and Malaysia to finally settling down in Delhi, she is a private person who loves to have people over rather than going to parties. She looks forward to spending time with family and holidays which are her best stressbusters.

Prior to her business venture, she was HOD and chief dietician at Apollo cradle in gk2 which is now Fortis La Femme. A double master’s degree holder in Nutrition (Kings College London) and Dietetics (SNDT University Mumbai) – this chemistry graduate found her true calling in helping people to lead healthier lives.
